The model

Less cabinet filler. More reason to show up.

Burnt by Bernie starts with high-end pastries and desserts, but the brand has permission to move. One week it might be glossy fruit tarts and laminated pastry. The next, a savoury item that disappears before lunch.

The site is set up around drops, pop-ups, direct orders and events so the business can grow without pretending it is already a permanent cafe.

BBB is led by a pastry chef with serious kitchen miles: trained in Sydney, sharpened in London, and trusted inside the kind of pastry program where tiny details matter. The name is staying quiet for now. The work can do the talking.
